Task 4

Human health risk from mycotoxins exposure and mitigation strategies using detoxifying agents

This Task aims to:

  • Characterize the potential human health risk to mycotoxins exposure from farmed Sparus aurata consumption through:

    i) in vitro bioaccessibility and bioavailability outcomes, and

        ii) using a probabilistic approach.

 

  • Investigate mitigation strategies for mycotoxins using detoxifying agents, such as green tea polyphenols (catechins) and aromatic herbs before in vitro digestion and in cooked samples.

Such information is certainly useful to help consumers to make wiser choices when it comes to the preparation of healthy meals, as well as it will enable food safety and health authorities to integrate this information in risk assessment and communication activities.
